Sweat the onion, celery and garlic in a sauce pan with oil, salt and pepper over medium heat.
In another sauce pan, reduce the Turkey Stock in a rolling boil until it's half gone.
Add the reduced Turkey Stock to the sauce pan with the onion mixture.
Brown the Ground Italian Sausage and add to the sauce pan that has the onion mixture.
Drop 2 sticks of butter to melt in the sauce pan with the onion mixture. Once it is melted add the the Thyme.
Rip up the Italian Bread into small pieces and place in a mixing bowl.
Add the onion mixture to the mixing bowl with the bread and mix well. All the bread should be wet, not soggy.
Take a sheet pan and spray it with pan spray. Spread the mixing bowl mixture on the sheet pan and cook in oven at 350 degree-F for approximately 35 minutes until the top of the bread is toasted.
Remove from oven and serve.
