Chicken Parmesan
This quick and easy Chicken Parmesan recipe will be your next family favorite recipe. The chicken comes out moist, tender and juicy every single time that your family will always be asking for it.
- 1 1/2 lbs Chicken Breasts
- 1 1/2 cup Italian Season bread crumbs
- 2 large eggs, beaten with 1 tbsp. milk
- 1/2 cup All-purpose flour
- Vegetable oil
- 1/2 cup Grated Parmesan
- 1 cup Italian Cheese Blend
- Kosher salt
- Black pepper
- 2 cups Marinara Cauce
- 35 Ground Ritz Crackers (1 sleeve)
Preheat oven to 425º. Prepare the chicken breasts by slicing in half length wise. Gently pound the chicken to approx 1/2 thick. Season with salt and pepper.
Prepare Breading Station with 3 large mixing bowls. The first bowl is all purpose flour. The second bowl is the egg mixture. In the last bowl, mix together Ground Ritz Crackers, Bread Crumbs, and Grated Parmesan.
Take one piece of chicken and coat both sides in the flour and shake off excess. Then dip into the egg mixture. Then dip into the bread crumb mixture. Ensure there is a thick, even coating of crumbs. Set aside on a plate. Repeat the steps for each piece of chicken.
Heat a deep cast-iron skillet over medium-high heat and add 1/4" vegetable oil. Oil should be between 325-350º. You can check the temperature with a thermometer. Carefully add each piece of chicken to the skillet. Don't crowd the pan. Cook until golden brown, approx. 3.5 minutes on each side. Once done, transfer each piece to a pan sprayed cookie tray. While the Chicken is cooking, heat up your favorite marinara sauce. Then ladle marinara on each piece of chicken that is on the cookie tray. Cover each piece with the Italian Cheese Blend. Place in oven for approx 6-7 minutes (until cheese is golden brown). Serve as is or over your favorite pasta.
