If you are planning on making extras to keep for leftover, don’t sauce the chicken or bake it in the oven. When you are ready to eat the leftovers, you can add your favorite marinara sauce and cheese and bake in the oven.
Homemade Chicken Parmesan
Chicken parm requires thin, crispy chicken. So whether you use chicken cutlets or chicken breasts, you want to make sure the chicken thickness is thin and even.
Having thin and even thickness chicken ensures the chicken cooks evenly.
To get thin and even chicken, you will need to gently pound the chicken to 1/2 thick with a meat mallet.
To pound the chicken, you will want to place plastic wrap on your workplace. Lay the chicken on top. Then place another piece of plastic wrap over the chicken. Then gently pound the chicken with a meat mallet.
Once the chicken is ready, season it with salt and pepper.
If you do have large pieces of chicken breasts, we do a butterfly cut and then pound the chicken.
HOW TO MAKE CHICKEN PARM
Chicken Parmesan is a classic and simple dish that your entire family will enjoy.
Ingredients
- 1 1/2 lbs Chicken Breasts
- 1 1/2 cup Italian Season bread crumbs
- 2 large eggs, beaten with 1 tbsp. milk
- 1/2 cup All-purpose flour
- Vegetable oil
- 1/2 cup Grated Parmesan
- 1 cup Italian Cheese Blend
- Kosher salt
- Black pepper
- 2 cups Marinara Cauce
- 35 Ground Ritz Crackers (1 sleeve)
Instructions
- Preheat oven to 425º. Prepare the chicken breasts by slicing in half length wise. Gently pound the chicken to approx 1/2 thick. Season with salt and pepper.
- Prepare Breading Station with 3 large mixing bowls. The first bowl is all purpose flour. The second bowl is the egg mixture. In the last bowl, mix together Ground Ritz Crackers, Bread Crumbs, and Grated Parmesan.
- Take one piece of chicken and coat both sides in the flour and shake off excess. Then dip into the egg mixture. Then dip into the bread crumb mixture. Ensure there is a thick, even coating of crumbs. Set aside on a plate. Repeat the steps for each piece of chicken.
- Heat a deep cast-iron skillet over medium-high heat and add 1/4″ vegetable oil. Oil should be between 325-350º. You can check the temperature with a thermometer. Carefully add each piece of chicken to the skillet. Don’t crowd the pan. Cook until golden brown, approx. 3.5 minutes on each side. Once done, transfer each piece to a pan sprayed cookie tray.
- While the Chicken is cooking, heat up your favorite marinara sauce. Then ladle marinara on each piece of chicken that is on the cookie tray. Cover each piece with the Italian Cheese Blend. Place in oven for approx 6-7 minutes (until cheese is golden brown). Serve as is or over your favorite pasta.
WHAT TO SERVE WITH CHICKEN PARMESAN
