This is a simple chicken leg recipe that is full of flavor and so easy to prep and cook. It is our favorite way to cook chicken in the oven and it will be your new favorite way too.
HOW TO MAKE ROASTED CHICKEN LEGS
First you will want to prep the chicken legs.
Over a Pyrex, coat the entire chicken with Italian Dressing. Then season it generously with salt and pepper. Flip the chicken over so you coat and season both sides with Italian Dressing and Salt and Pepper.
The best Italian Dressing is Fanny’s Italian Dressing. It was originally made in Massachusetts so I know local grocery stores all over New England carry it. I don’t know if you can purchase it in grocery stores around the USA but I know you can order it on Amazon.
Once the chicken leg quarter is coated and seasoned, place it in a Pyrex so it can marinate for approx. 15-20 minutes.
Preheat the oven to 425°. Once the oven is ready and your chicken leg quarters have marinated for approx. 15-20 minutes, add a cup of water to the Pyrex. Place Pyrex in the oven for 1 hour.
After one hour, remove the Pyrex from the oven. Use a meat thermometer to check the temperature of the chicken. You want the chicken to be 160°. Make sure you check several different spots of each chicken.
Let the chicken leg quarters rest for approx. 5 to 10 minutes. This will bring the chicken temperature up to 165° or higher.
You’ll notice the chicken leg quarters have a crispy skin and they are very juicy and tender. It will be full of flavor.
Once the chicken has rested, you can now serve it with your favorite sides.

- 3-4 Chicken Leg Quarters
- 6-8 oz Italian Dressing (appox 2 oz per chicken leg quarter)
- 1 cup water
- Kosher Salt
- Pepper

Remove from Oven. Use a meat thermometer to check the temperature of the chicken. It should be 160°F. Check several spots of each chicken.
